Hearty Grass-Fed Beef and Veggie Stew for Nourishing Comfort

  • 1 pound grass-fed beef
  • 1 cup kale, bite-sized pieces
  • 1 cup couscous
  • 1 jar canned marinara
  • 2 tbsp Veggie Meadow Spice
  • 1 tbsp salt
  • 1 tsp pepper
  • 1 tsp fresh lemon juice


  1. Brown the Beef: In a large saucepan over medium heat, brown the grass-fed beef. Season it with salt, pepper, and half the portion of Veggie Meadow Spice.
  2. Cook the Couscous: While the beef is cooking, bring a medium saucepot of water to a boil. Add couscous and cook until tender, approximately 10 minutes. Drain once done.
  3. Prepare Kale: Cut the kale into bite-sized pieces and set aside for later.
  4. Combine and Simmer: To the beef, add the cooked couscous and jar of marinara. Combine and let it simmer for 10 minutes. Add the bite-sized kale, the remaining Veggie Meadow Spice, and fresh lemon juice to the pan.
  5. Adjust Seasoning: Taste the stew and adjust seasoning with more salt, pepper, lemon juice, and/or Veggie Meadow if needed.
