Ingredients
Tomato Garlic Confit
1 Cup Grape Tomatoes
½ Cup Garlic Cloves, Peeled
¾ Cup Olive Oil
1 Sprig of Thyme
1 Tbsp Sea Salt & Herbs
Goat Cheese Dip
6 oz Goat Cheese Crumbles
¼ Cup Parsley, Chopped
¼ Cup Dill, Chopped
3 Tbsp Confit Oil (See Directions Below)
2 Tsp Sea Salt and Herbs
Directions
- Preheat the oven to 350°F. Add grape tomatoes, garlic cloves, olive oil, thyme sprig, and Sea Salt and Herb seasoning to an oven-safe dish. Bake in the preheated oven for 35-45 minutes, until the tomatoes are blistered and the garlic is tender.
- Once cooked, strain the oil, reserving 3 tablespoons for the Goat Cheese Dip. Set the confit aside.
- In a food processor, combine goat cheese crumbles, chopped parsley, chopped dill, 3 tablespoons of reserved confit oil, and Sea Salt and Herb seasoning. Blend until smooth.
- Transfer the goat cheese dip to a serving dish. Top with the tomato garlic confit and drizzle with a bit more of the reserved confit oil. Serve with bread, crackers, or vegetables.
